Nut sticks with candied fruit are crunchy shortbread cookies made from two kinds of flour, wheat and almond, plus cornstarch for that crumbly texture. The dough comes together in five minutes and bakes in just 20-25 minutes at 180 °C. Fragrant with a nutty note, this is my favorite recipe, I highly recommend it.

Course: Cookies
Cuisine: Home cooking

Ingredients

  • 160 g flour
  • 50 g almond flour
  • 50 g powdered sugar
  • 100 g margarine softened
  • 1 tbsp cornstarch
  • 40 g candied fruit
  • 0.5 tsp lemon juice
  • salt pinch

Method

  1. In a deep bowl, mash the margarine with the powdered sugar and lemon juice.
  2. Sift in both flours, wheat and almond, together with the cornstarch and salt. Add the candied fruit, knead the dough and gather it into a ball.
  3. Divide the dough into two parts. Roll each into a rectangle and cut into pieces - about 12 in total.
  4. Roll each piece into a stick and place on a floured baking sheet.
  5. Bake in an oven preheated to 180 °C for 20-25 minutes, until golden. Let the finished sticks cool, then enjoy. Enjoy your meal!

Notes

The sticks only turn crunchy once fully cooled, so don't try them while still hot.

Tips

  • Two kinds of flour: sift the wheat and almond flour together with the cornstarch - it's the almond flour that gives the cookies that nutty note.
  • Split the dough in two: it's easier to roll each half into a rectangle and cut it into equal pieces, then roll those into sticks.
  • Go by color: the sticks are done once they turn golden, usually around 20-25 minutes.
  • Let them cool completely: the sticks are still soft while hot, and only turn crunchy once they've cooled.
