Lviv syrnyk is a classic cottage cheese bake made from 500 g of homemade cottage cheese, baked in a rectangular 22x12 cm pan and covered with chocolate glaze. It bakes for 50-60 minutes at 150-160 C, and you can add raspberries, blueberries and cranberries inside. Be sure to try this one - you won't regret it, enjoy!

Ingredients
  

For the cottage cheese filling
  • 500 g homemade cottage cheese
  • 3 eggs
  • 80 g sugar
  • 10 g vanilla sugar
  • 30 g yogurt or sour cream
  • 75 g butter melted
  • 12 g cornstarch
  • salt, vanillin pinch each
  • raspberries, blueberries, cranberries optional, to taste
For the glaze
  • 70 g dark chocolate
  • 10 g vegetable oil neutral

Method
 

  1. Put the cottage cheese in a bowl, add the sugar, vanilla sugar, a pinch of salt, the yogurt (or sour cream) and the melted butter. Blend everything with an immersion blender until smooth.
  2. Add the cornstarch and mix by hand with a spatula, then add the eggs one at a time - the batter is ready.
  3. Line a rectangular 22x12 cm pan with parchment, pour in half the batter, scatter the berries on top and cover with the second half of the batter.
  4. Bake at 150-160 C for 50 to 60 minutes, then let cool completely and remove from the pan.
  5. For the glaze, melt the dark chocolate and add the neutral vegetable oil. Spread the glaze over the top and sides, and sprinkle with almond flakes if you like.
  6. Refrigerate the syrnyk overnight - it's ready to serve in the morning!

Tips

  • Choose berries by taste and preference - raspberries, blueberries and cranberries all work equally well.
  • You can substitute sour cream for the yogurt in the filling.
  • Fold in the cornstarch by hand with a spatula, and add the eggs one at a time.
  • If you like, sprinkle almond flakes on top.
  • Be sure to let the syrnyk chill overnight in the fridge - it slices better and the flavor comes through more.
