- Beat the butter with the powdered sugar into a light, airy mixture.
- Add the baking powder and zest, and mix.
- Add the flour and knead the dough by hand, but only briefly. Gather the dough into a ball and put it in the fridge for 20 minutes.
- Roll out the dough into a very thin sheet, about 2 mm thick, and cut out cookies using cutters.
- Bake in an oven preheated to 180-190C for 10-15 minutes. The finished cookies should be golden and very fragrant. Bon appetit!

Don't overwork the dough - how briefly you knead it determines how crumbly the cookies turn out.
Tips
- Don't knead the dough for long - just enough for it to come together: this keeps the cookies crumbly.
