- Wash and chop the vegetables, and mince the garlic.
- Pour vegetable oil into a skillet, heat it well, and lightly saute the onion.
- Add the eggplant and simmer for about 5 minutes.
- Add the bell pepper, stir, and simmer a little longer.
- Add the tomatoes and garlic to the skillet and keep simmering.
- At the end, season with salt, add sugar, and apple cider vinegar if you like. Cook until done and turn off the heat - the relish is ready. Bon appetit!
