Chocolate cake made with sparkling mineral water turns out huge, airy, and very moist - the carbonated water combined with baking powder gives it lift without whipping egg whites. The batter has two kinds of cocoa and walnuts, and bakes for 50-60 minutes at 160-180°C. It also works great as a chocolate cake base, I recommend it.

Ingredients
  

  • 200 g flour
  • 300 g sugar
  • 50 g Nesquik cocoa
  • 30 g cocoa powder
  • 10 g baking powder
  • 5 eggs
  • 160 ml mineral water sparkling
  • 160 ml vegetable oil
  • 100 g walnuts

Method
 

  1. Mix all the dry ingredients in a bowl. In another bowl, beat the eggs and sugar with a mixer into a fluffy foam, add the flour mixture, and beat again. Pour in the mineral water and vegetable oil, then fold in the walnuts at the end.
  2. Pour the batter into a pan - it should be a large one, since the cake rises a lot.
  3. Bake for 50-60 minutes in an oven preheated to 160-180°C. Check for doneness with a wooden skewer.
  4. Let the finished cake cool. Enjoy!

Tips

  • Use a pan with plenty of extra height: the batter rises a lot.
  • This same cake works great as a chocolate base for a layer cake - just slice it into layers.
