Chocolate cream cheese frosting is a rich, obedient cream made from cream cheese, butter and dark chocolate that holds its shape beautifully - perfect for both filling and crumb-coating a cake. It comes together in 20 minutes and firms up in the fridge in a couple of hours. This is my favorite among chocolate frostings - highly recommended!

Chocolate Cream Cheese Frosting
A rich chocolate cream cheese frosting with dark chocolate ganache - for filling and crumb-coating cakes.
Ingredients
Method
- Take the butter out ahead of time and let it soften at room temperature.
- Melt the dark chocolate with the cream over a bain-marie to make a ganache.
- Whip the butter until pale, gradually adding the powdered sugar.
- Add the cocoa, then, while still whipping, quickly fold in the cold cream cheese.
- Add the chocolate ganache and whip for another couple of minutes.
- Chill the frosting in the fridge for a couple of hours to firm up, then use as needed.

Tips
- The butter should be at room temperature and at least 82% fat, while the cream cheese should be cold.
- Fold in the cheese quickly, or the cream may split.
- Let the ganache cool slightly before adding it to the cream.
- Be sure to let the cream firm up in the fridge before working with the cake.
