Apple compote is a homemade drink made from half a kilo of apples, two liters of water and a couple of lemon slices, and it cooks in about 20 minutes flat. In summer it's wonderfully refreshing cold, and in winter it warms you up served warm, quenching thirst either way. I recommend letting the compote steep - the flavor comes out richer.

- Wash the apples, cut them in half, remove the core and chop into pieces.
- Put the apples in a pot, cover with water and bring to a boil on the stove. Add the sugar and lemon slices.

- Simmer over low heat for another 5-7 minutes until done.
- Let the compote steep - then it's ready to drink.

Tips
- Lemon: a couple of slices add a pleasant tartness and keep the compote from being cloying.
- Steeping: let the compote sit after cooking - the flavor and aroma come through stronger.
