Cottage cheese rose buns are sweet yeast rolls with a clever shape: a round of dough is cut into three sections and joined into a circle, forming a flower. They bake for 25-30 minutes at 180°C and come out soft and fragrant. Recommended - buon appetito!

Cottage Cheese Rose Buns

Sweet yeast buns filled with cottage cheese, shaped into pretty rose flowers.

Ingredients
  

For the dough
  • 125 ml milk warm
  • 1.5 tsp active dry yeast
  • 1 egg
  • 3 tbsp sugar
  • 50 g butter melted
  • 300+50 g all-purpose flour 50 g extra if needed while kneading
  • pinch vanilla powder
  • pinch salt
For the filling
  • 250-300 g farmer's cheese
  • 3 tbsp sugar
  • pinch vanilla powder

Method
 

  1. Dissolve the yeast in the warm milk.
  2. Sift 300 g of flour into a bowl, add the salt, sugar and vanilla, pour in the melted butter, the beaten egg and the milk-yeast mixture. Knead the dough, adding more flour if needed.
  3. Shape the dough into a ball and let it rest in a warm spot for 1.5 hours.
  4. For the filling, mix the farmer's cheese with the sugar and vanilla until smooth, passing the cheese through a sieve first if you like.
  5. Divide the risen dough into portions and roll each into a ball. Roll each ball into a flat round and make three cuts around it, not reaching the center.
  6. Place the filling in the center and bring the three sections together around it, shaping the bun into a rose.
  7. Place the buns on parchment, brush with milk, and bake in a preheated 180°C oven for 25-30 minutes. Let cool and dust with powdered sugar.

Tips

  • Don't cut all the way to the center when scoring the dough round, or the filling will leak out.
  • You can pass the cottage cheese through a sieve for a smoother filling.
  • Only add the extra 50 g of flour if needed while kneading.
  • Brush the buns with milk before baking, and dust the finished ones with powdered sugar.
