Pumpkin grissini are Italian breadsticks that are crisp outside and soft inside, made from yeast dough with pumpkin puree, turmeric and dried garlic. They bake in just 15-17 minutes at 180-190°C and go beautifully with soup or a cheese board. Recommended - buon appetito!

Pumpkin Grissini

Crispy pumpkin breadsticks with turmeric, dried garlic and sesame - quick, fragrant baking to serve with soup or cheese.

Ingredients
  

  • 250 g flour + 2 tbsp for kneading
  • 120 ml water warm
  • 50 g pumpkin puree 2 tbsp, pumpkin roasted and pureed ahead of time
  • 1 tbsp olive oil
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 g active dry yeast
  • 0.5 tsp dried garlic
  • 1 tsp turmeric
  • sesame seeds for coating the breadsticks

Method
 

  1. Knead the dough any way you like - I put all the ingredients into the bowl of a stand mixer and knead with the dough hook, adding a couple of spoonfuls of flour along the way.
  2. Preheat the oven to 180-190°C, top-bottom heat setting.
  3. Turn the dough out onto a floured surface, divide into pieces, and roll into sticks by hand.
  4. Transfer the grissini to a baking tray, then roll or sprinkle with sesame seeds, paprika or dried garlic if you like.
  5. Bake for 15-17 minutes at 180-190°C.

Tips

  • Roast the pumpkin ahead of time and puree it - that way the puree stays thick and won't loosen the dough.
  • If the dough is sticky, add a couple of extra spoonfuls of flour while kneading.
  • Roll the breadsticks in paprika, dried garlic or any of your favorite spices instead of sesame seeds if you like.
