Berry compote for winter is canned with just one pour of boiling water: a three-liter jar takes 2 cups of mixed small berries, 400 grams of sugar and three sprigs of lemon balm. The compote turns out very rich and fragrant, and the lemon balm gives it a special flavor. I highly recommend it.

Ingredients
  

  • 3 l boiling water
  • 400 g sugar 2 cups
  • 2 cups mixed berries currants, jostaberries, gooseberries, raspberries, cherries
  • 3 lemon balm sprigs

Method
 

  1. Wash and sterilize the jars and lids.
  2. Gather a mix of berries - any kind works, preferably small ones, since you'll only pour boiling water once.
  3. Put the berries and sugar into the prepared jars, and add the lemon balm sprigs.
  4. Pour in the rolling boiling water and seal immediately.
  5. Wrap the jars overnight, 10-12 hours, then unwrap, let cool and take to the cellar.

Tips

  • Any berries work, preferably small ones, since there's only one pour of boiling water: red and white currants, jostaberries, gooseberries, raspberries, cherries.
  • The boiling water needs to be truly at a rolling boil, otherwise the jar might not hold.
  • After wrapping the jars for 10-12 hours, let them cool completely before taking them to the cellar.
