Method
- Whisk the eggs with the salt into a light foam, pour in a cup of boiling water and keep whisking.
- Add a cup of kefir and the baking soda, stir in the sugar and mix again.
- Add the flour in parts and knead a lump-free batter, then stir in the vegetable oil at the end.
- Heat a pan, grease it for the first pancake, and fry the blini on both sides.

Tips
- If the batter turns out too thin, add another 2 tablespoons of flour.
- The vegetable oil in the batter means you only need to grease the pan before the very first pancake.
