Method
- Combine the flour, salt, cold water, and olive oil in a bowl and quickly knead into a dough.

- Wrap the dough in plastic wrap and refrigerate for 40-60 minutes.

- Roll the dough out into a thin rectangle, sprinkle with sesame seeds, and roll over it once more with the rolling pin, pressing the seeds into the dough. Cut the sheet into thin strips and twist each one into a spiral.

- Arrange the breadsticks on a baking sheet greased with vegetable oil and bake for 12-15 minutes in an oven preheated to 200°C.

- Remove the finished grissini and let them cool. Enjoy!

Notes
The dough is yeast-free with no proofing needed - all the crispness comes from the cold water and thin rolling.
Tips
- Only use cold water - it keeps the dough easy to work with and makes the breadsticks crispy.
- Sesame seeds: sprinkle them over the rolled-out sheet and go over it once more with the rolling pin, pressing the seeds into the dough - that way they won't fall off during baking.
- The thinner the sheet and the narrower the strips, the crispier the grissini will turn out.
