Flaky beer cookies are a budget-friendly recipe with just six ingredients, where light beer combined with two kinds of fat gives a crisp, flaky shortbread texture. The dough chills for an hour, then gets rolled out thin, sprinkled with sugar, and baked for 15 minutes. Highly recommended with tea.

Ingredients

  • 200 g flour
  • 50 g butter
  • 50 g vegetable oil
  • 50 ml light beer
  • salt pinch
  • 2 tbsp sugar

Method

  1. Melt the butter in a bowl, add the vegetable oil, beer, salt, and sugar. Stir, then add the flour in parts and knead into a dough.
  2. Gather the dough into a ball and chill in the fridge for one hour. Then roll it out into a thin sheet, sprinkle with sugar if you like, and cut into pieces.
  3. Arrange the cookies on a baking tray and bake for 15 minutes at 180-200°C.
  4. Let the finished cookies cool. Enjoy!

Tips

  • Use light beer: dark beer gives a noticeable bitterness.
  • The hour in the fridge is essential - cold dough rolls out thinner and the cookies come out flakier.
