Potato Vareniki

Homemade vareniki filled with mashed potatoes and topped with fried onions, made on a soft, elastic dough with warm water and vegetable oil.

Ingredients
  

Dough
  • 400 g flour
  • 0.5 tsp baking powder
  • 250 ml warm water
  • 2 tbsp vegetable oil
Filling
  • mashed potatoes
  • fried onions

Method
 

  1. Sift the flour onto the counter and mix with the baking powder. Make a well in the center and pour in the vegetable oil.
  2. Gradually add the warm water while kneading the dough. Knead until smooth, about 5 minutes - the dough should be soft and elastic.
  3. Shape the dough into a ball, dust with flour, cover with a towel and let it rest on the counter for 35 minutes.
  4. While the dough rests, make the mashed potatoes and fry the onions in a skillet until golden.
  5. Roll the dough out thin, cut out circles with a glass, fill with mashed potato and pinch the edges closed.
  6. Before cooking, freeze the shaped vareniki in the freezer for about 10 minutes.
  7. Cook in boiling water for 4-5 minutes, remove and top with fried onions. Enjoy!

Notes

Freezing before cooking helps the vareniki hold their shape and prevents them from falling apart.
