Mashed potato pizza has an unusual but very tasty topping: mashed potatoes, grated cheese, smoked balyk and pickled onion on thin yeast dough. The dough rises for an hour, and the pizza itself bakes in just 20 minutes at 220°C. This amount makes three pizzas, 20-22 cm in diameter - recommended.

Method
- Add the yeast, sugar and olive oil to the warm water and stir until smooth.
- Sift in the flour, pour in the yeast mixture, add the salt and knead a soft, elastic dough. Gather into a ball, cover with plastic wrap and leave in a warm spot for 1 hour.
- Divide the risen dough into 3 pieces, stretch each one by hand into a 20-22 cm circle, forming a raised rim.
- Spread the base with sauce, then top with mashed potatoes, cheese, balyk and pickled onion.
- Bake for 20 minutes in a well-preheated oven at 220°C.

Notes
The dough is enough for 3 pizzas, 20-22 cm in diameter.
Tips
- Stretch the dough by hand, forming a raised rim - this makes the pizza airier at the edge.
- The pickled onion adds a tang that balances the hearty mashed potato.
- Preheat the oven as hot as possible: the higher the temperature, the better the base bakes through.
