Homemade Kinder milk slices are a thin chocolate sponge with a delicate milk souffle set on gelatin, and making them yourself turns out cheaper, bigger, and tastier than buying the store version. In my adaptation, 33% cream is replaced with strained sour cream, water with milk, and powdered sugar isn't needed at all. Recommended - head to the kitchen!

Homemade Kinder milk slice: a thin chocolate sponge with a milk souffle made from strained sour cream and condensed milk, set with gelatin.

Ingredients
  

For the sponge
  • 3 eggs
  • 3 tbsp sugar
  • 2 tbsp flour
  • 2 tbsp cocoa powder
For the souffle
  • 200 g strained sour cream made from store-bought 15%, hung in cheesecloth for 2 hours
  • 100 ml milk
  • 150 g condensed milk
  • vanilla a pinch
  • 1 tsp liquid honey optional
  • 15 g gelatin

Method
 

  1. Separate the eggs into whites and yolks. Whip the whites into a stiff foam, gradually adding the sugar, until dense. Fold in the yolks, whip once more, and turn off the mixer.
  2. Sift in the flour and cocoa, mix, and spread the sponge batter in a thin, even layer on parchment.
  3. Bake in an oven preheated to 160-170°C for 12-15 minutes. While the sponge is still hot, trim the uneven edges and cut it into two equal rectangular pieces. Let cool.
  4. Soak the gelatin in the milk for 10-15 minutes, then dissolve it over a water bath and keep it there so it stays liquid.
  5. Whip the sour cream with the condensed milk, honey, and vanilla into a smooth, slightly fluffy mixture.
  6. While continuing to whip, strain the dissolved gelatin into the mixture through a sieve and whip briefly once more.
  7. Immediately spread the souffle over one of the chocolate rectangles, distribute evenly, and cover with the second one. Press down gently with your hands and chill for at least 1 hour.
  8. Cut into slices and serve. Enjoy!

Notes

33% cream is replaced here with strained sour cream, and water with milk.

Tips

  • Strained sour cream is easy to make from store-bought 15%: hang it in cheesecloth for two hours.
  • Keep the dissolved gelatin over a water bath so it stays liquid, and strain it directly into the mixture through a sieve.
  • The souffle thickens instantly - spread it over the sponge right after whipping.
  • You can skip the honey - it doesn't affect the texture.
