Antipasti Olives in Pastry on Skewers

Olives in pastry are a striking Italian antipasti bite: pitted olives are threaded onto long skewers and wrapped in a braid of shortcrust (or puff) pastry. Just brush with egg yolk, sprinkle with sesame seeds, and bake for 30 minutes at 180°C - and you've got an appetizer that always surprises guests. Recommended.

Ingredients
  

  • 300-400 g shortcrust pastry can be swapped for ready-made puff pastry
  • 1 can pitted olives
  • 1 egg yolk for brushing
  • sesame seeds for sprinkling
  • long skewers

Method
 

  1. Make shortcrust pastry (or use ready-made puff pastry) and roll it out into two rectangular sheets.
  2. Thread the pitted olives onto the skewers - about 5 per skewer.
  3. Cut the pastry sheet into strips, slitting each one lengthwise almost to the end. Pierce a strip with a skewer and, crossing the strands, weave the pastry into a braid between the olives.
  4. Brush the pieces with egg yolk and sprinkle with sesame seeds.
  5. Bake in a preheated oven at 180°C for 30 minutes. Let the olives in pastry cool. Enjoy!
