Method
- Sift 300g of flour with the cocoa and add the cinnamon. Melt the butter and mix it with the honey.
- Beat the eggs with the sugar, pour into the flour mixture, add the butter mixture and the baking soda dissolved in lemon juice. Knead the dough, adding the remaining flour. Gather it into a ball and chill in the fridge for an hour.

- Take out the dough and roll it into a sheet no thicker than 0.5 cm.

- Shape the pieces, place them on a floured baking sheet and bake for 10-15 minutes at 190°C.

- Let the shortcakes cool - they're ready for tea, or even better, topped with royal icing. Enjoy!
