Sour Cream Banana Oat Parfait

An airy jar dessert: delicate gelatin-set sour cream layered with caramelized toasted oats and fresh banana.

Ingredients
  

  • 200 g rolled oats
  • 200 g sour cream
  • 2 bananas
  • 4 tbsp sugar
  • 1 tbsp gelatin
  • 70 ml boiling water
  • butter for toasting the oats
  • sugar for toasting the oats

Method
 

  1. Toast the oats (I usually do this the night before): melt the butter in a frying pan, add the oats and toast them, stirring constantly and sprinkling in sugar little by little.
  2. Mix the sour cream with the sugar. In a separate bowl, pour the boiling water over the gelatin and stir quickly until fully dissolved. Let it cool slightly, pour into the sour cream mixture and stir.
  3. Slice the bananas into rounds.
  4. Assemble the dessert in jars in layers: sour cream, banana, oats - then sour cream, banana, oats again. Alternate however you like. Enjoy!

Eat it right away for an airy dessert with crunchy oats, or chill it: the gelatin sets and the layers firm up.

Tips and substitutions

  • Toast the oats the night before - that's what I usually do. In the morning all that's left is mixing the cream and assembling the jars.
  • Cool the gelatin slightly before adding it to the sour cream - boiling-hot liquid can curdle it.
  • Slice the bananas right before assembling so they don't brown. Strawberries, peaches or pears work nicely too.
  • Use full-fat sour cream - the cream layer comes out silkier and holds its shape better.

FAQ

Can I eat it right away, or does it need to set?

You can dig in immediately - the dessert will be airy and the oats crunchy. Or chill the jars for a while: the gelatin sets and the layers firm up, almost like panna cotta. Delicious either way.

What can I use instead of sour cream?

Thick natural or Greek yogurt works well - the dessert turns out lighter with a pleasant tang. Adjust the sugar to taste in that case.
