Cutlet Lavash Wrap

A quick hearty snack: a lavash parcel with a juicy cutlet, pickled onion, tomatoes and cheese, toasted crisp in a dry pan.

Ingredients
  

  • 1 sheet lavash flatbread
  • 1 cooked cutlet or patty
  • 2 tomatoes
  • 1 red onion
  • 1 bunch parsley
  • 50 g hard cheese
  • 2 tbsp mayonnaise
  • salt, sugar for the onion
  • vegetable oil for the onion

Method
 

  1. Pickle the onion: slice into half-rings, season with salt and sugar, add a splash of oil and leave for 10 minutes.
  2. Spread the lavash with mayo. Layer the pickled onion, tomato rings, the cutlet in the middle, grated cheese and parsley.
  3. Fold into a parcel. Toast on a hot dry pan on both sides until crisp.
  4. Straight from the pan to the table. Enjoy!

Notes

Start toasting seam-side down - the parcel seals and won't unroll.

Tips and variations

  • Pickled onion is the flavor secret: salt, sugar and a splash of oil for 10 minutes remove the bite and add gentle tang.
  • Lavash: any shape works, round or rectangular - just make sure it's fresh so it doesn't crack when folding.
  • Dry pan: toast the parcel without oil - the lavash crisps up while the cheese melts inside.
  • Variations: swap the cutlet for chicken breast, nuggets or a fish patty; swap mayo for garlicky sour cream sauce.

Assemble the parcels a few hours ahead and refrigerate; toast right before serving so the lavash stays crispy.

How do I fold it so it doesn't open?

Fold like an envelope: sides over the filling first, then roll away from you. Put the seam side down in the pan first - it seals shut.
