Shortcrust Tartlets with Tangerine Curd and Meringue

Crumbly shortcrust tartlets with homemade tangerine curd and a crunchy meringue cap. A bright citrus dessert for tea time.

Ingredients
  

Dough
  • 160 g flour
  • 90 g butter
  • 2 tbsp sugar
  • 1 egg
Tangerine curd
  • 4 tangerines
  • 60 g sugar
  • 1 tbsp cornstarch
  • 2 egg yolks
  • 20 g butter
Meringue
  • 2 egg whites
  • 150 g powdered sugar
  • 1 pinch salt

Method
 

Dough
  1. Put the flour, sugar and egg in a bowl, grate in the butter and knead into a dough.
  2. Gather the dough into a ball, wrap in plastic and chill in the fridge for 30 minutes.
Tangerine curd
  1. Peel the tangerines and squeeze out the juice. Strain it through a sieve into a saucepan, add the sugar and cornstarch.
  2. Place over heat and simmer until slightly thickened. Add the yolks and butter and, stirring constantly, bring to a boil until thick. Remove from heat and cool.
Meringue
  1. With a mixer, whip the egg whites with a pinch of salt into a fluffy foam, gradually adding the powdered sugar. Whip to stiff peaks. Transfer the meringue to a piping bag and refrigerate.
Assembly and baking
  1. Distribute the chilled dough among the molds - makes 8 pieces. Bake in an oven preheated to 180 °C for 20 minutes.
  2. Spoon the tangerine curd into the center of each tartlet and top with meringue.
  3. Return the tartlets to the oven for another 20 minutes at 150 °C. Done - enjoy. Bon appetit!

Notes

It's convenient to cook the curd while the dough chills. The meringue dries out at a low temperature - don't increase the heat during the second baking stage.
