In a bowl, mix all the dry ingredients, pour in the warm water, and knead into a dough. At first it will look like a batter - add flour very gradually and knead well by hand until the dough becomes soft and elastic. Cover the bowl with plastic wrap and set it in a warm place for one hour.
After an hour, the dough should have risen well.
Turn the dough out onto a floured surface and roll it into a large sheet no more than 0.5 cm thick. Cut out circles using a glass.
Assemble each roll from 4 circles stacked on top of each other, brushing each one with water, including the top. Place on a baking tray and let rise for another 30 minutes.
Bake in an oven preheated to 200-220°C for 18-25 minutes.
