Mille-Feuille Pastries

Mille-feuille pastries made with store-bought puff pastry and a classic mascarpone cream (like the one used for tiramisu) with berries.

Ingredients
  

  • 500 g frozen puff pastry
  • 250 g mascarpone cheese
  • 100 g sugar
  • 2 tsp lemon juice
  • 1 ml vanilla essence
  • eggs whites and yolks separated
  • berries, any kind I used strawberries and raspberries from the freezer

Method
 

Puff pastry layers
  1. Thaw the pastry, cut into rectangles, roll out thinly and prick with a fork.
  2. Bake at 200 C for 5-10 minutes, depending on your oven. Then take out the pastry layers and let cool.
Cream
  1. Separate the whites from the yolks. Rub the yolks with half of the sugar by hand with a whisk, and whip the whites with the other half of the sugar into a foam with a mixer. At the start, add half a teaspoon of lemon juice to both the yolk mixture and the whites.
  2. Add the mascarpone to the yolk mixture and whip by hand with a whisk into a light, fluffy mass. Once the mixture is smooth, fold in the whites, mix gently, and add the vanilla essence. The cream is ready.
Assembly
  1. Assemble the pastries: spread cream on each layer, alternating berries and cream.
  2. Beautiful! Everything is ready. Bon appetit!

Notes

The cream here is a classic one, like the one used for tiramisu. Any berries work well - fresh or thawed.
