Method
Puff pastry layers
- Thaw the pastry, cut into rectangles, roll out thinly and prick with a fork.
- Bake at 200 C for 5-10 minutes, depending on your oven. Then take out the pastry layers and let cool.
Cream
- Separate the whites from the yolks. Rub the yolks with half of the sugar by hand with a whisk, and whip the whites with the other half of the sugar into a foam with a mixer. At the start, add half a teaspoon of lemon juice to both the yolk mixture and the whites.
- Add the mascarpone to the yolk mixture and whip by hand with a whisk into a light, fluffy mass. Once the mixture is smooth, fold in the whites, mix gently, and add the vanilla essence. The cream is ready.
Assembly
- Assemble the pastries: spread cream on each layer, alternating berries and cream.

Notes
The cream here is a classic one, like the one used for tiramisu. Any berries work well - fresh or thawed.
