Dark Beer Brownie

A moist chocolate brownie made with dark beer and tart cherries, based on a Jamie Oliver recipe. Rich, fragrant and very easy to make.

Ingredients
  

  • 180 g butter
  • 200 g dark chocolate 58% cocoa
  • 200 g sugar
  • 125 g flour
  • 40 g cocoa powder
  • 1 tsp baking powder
  • 3 eggs
  • 200 ml dark beer
  • 200 g cherries I used frozen

Method
 

  1. In a bowl, mix all the dry ingredients: flour, cocoa powder, sugar and baking powder.
  2. In a separate bowl, melt the butter with the chocolate. Add the butter-chocolate mixture to the dry ingredients and mix well.
  3. In a separate bowl, whip the eggs into a fluffy foam and pour into the main mixture. Stir.
  4. Add the thawed cherries and the beer. Mix the batter until smooth.
  5. Line a pan about 25x20 cm with parchment and pour in the batter. Bake for 25 minutes in an oven preheated to 180 C.
  6. Take out the cake, let it cool, and cut into pieces. Or better yet, put it in the fridge overnight to mature. Bon appetit!

Notes

Jamie Oliver's original uses raspberries instead of cherries - feel free to make it that way too. After a night in the fridge, the brownie becomes even tastier.
