In a bowl, blend the cottage cheese, eggs, sugar, vanilla sugar and a pinch of salt into a smooth mixture.
Sift in 150 g of flour with the baking powder, mix with your hand or a spoon, then add about 50 g more flour and knead the dough. It will be slightly sticky, but workable.
On a flour-dusted counter, roll walnut-sized doughnuts, coating each one in flour - you'll get about 21 pieces.
Heat vegetable oil in a small saucepan to a depth of about 2 cm and fry the doughnuts until golden, turning often.
Place the finished doughnuts on paper towels to absorb excess oil, and dust with powdered sugar. Enjoy!
